The “filière bovine” brings together all those involved in the beef industry, from production
to distribution - farmers, cattle merchants, wholesalers, butchers and distributors.

Cattle Merchants

The preparation of the cattle for market is carried out by both private operators and cooperatives.
Among these cooperatives there are 7 production organisations:  Cialyn , Charolais Horizon , Global  (Gecsel  et Bourgogne élevage), Socaviac ,and 3 registered associations of cattle rearers - Elvea 71, Elvea 21-89 and Elvea 58 .  This last group work with private cattle merchants.
50% of the trade is carried out by private operators and 50% by cooperatives.
There are several cattle markets in the region, the oldest being at St Christophe en Brionnais  (Departement 71). This holds a cattle auction for the animals ready to be fattened up and a traditional cattle market for the cattle ready for slaughter.  There are also cattle auctions at Nièvre, at  Moulins Engilbert (Departement 58) and a traditional cattle market Dijon as well as Charolles.
